LAMINGTON CAKE

Lamington cake. Ni untuk jiran sebalah kami, cantekk pinggan depa kan... 


Nama kek neh agak pelik skit. Mokcik dapatkan resepi kek ini dari blog 1001 resepi nun lah. So sekali lagih minta ijin C&P resepi yor tuan tanah.

Kek ini adalah berbentuk kiub empat segi yang disaluti icing cekelat dan kelapa. Kadang-kadang ia juga dihidangkan dengan cream atau straberi jem ditengah. Kek ini biasa dijumpai di Australia dengan perisa oren dan di New Zealand biasanya perisanya yang sering dijumpai adalah berperisa rasberi.

Kek ini dinamakan sempena nama Lord Lamington, who served as Governor of Queensland from 1896 to 1901.

Honey Lamington

Ingredients


125g dark chocolate, chopped
2/3 cup honey
185g butter
1/3 cup castor sugar
2 eggs
1 3/4 plain flour
1/2 teaspoon bicarbonate of soda
1/2 cup water
2 cups coconut


 

Method

Grease 23cm square slab pan, line with paper and grease paper.

Melt chocolate in a bowl over hot water, stir in honey.
cream butter and sugar until light and fluffy. beat in eggs one at a time, beat until combined.
Stir in chocolate mixture, then half the sifted flour and soda with half the water, then remaining flour and water.
Spread into prepared pan. Bake at 180C for 30 minutes.
Stand 5 minutes or keep in the fridge (if your like). Trim crusts from cold cake, cut into small squares. Toss each square in honey syrup. Toss in coconut. allow to set.

1/2 cup honey
1 1/2 cup sugar
1 cup water
Honey syrup
Combine all ingredients. Simmer uncovered until syrup slightly thickened. Cool
